The Wiltshire Horn breed is virtually unknown for meat production in the UK. However, in Australia and New Zealand they are extensively used and highly sought after for their high quality meat. Described on one website as ‘THE PERFECT MEAT SHEEP’ it is surely only a question of time before they become popular in the UK. Perfect for smallholders who require a few table lambs, because of their lean, fine grained tender meat and also for commercial breeders, because of their success in cross breeding programmes.

But don’t just take our word for it; below are some comments from breeders in Australia and New Zealand

“Wiltshire’s are renowned for the quality of their meat, which is generally light in texture, fine grained, lean and tender with excellent flavour. The lamb carcasses are high yielding with consistent dressing percentages around 50%.

"Prime carcasses for the butcher. Good heavy 26kg dressed carcasses, good white fat coverage with meaty eye in loin. Great quality meat with nice markings, what every butcher wants for prime lamb meat"
Byarlea Wiltshire Horn Sheep Stud

“the Wiltshire is perfect for the prime lamb producer – passing on their vitality, high growth rates and high quality meat in any cross breeding program”
